Recipe:
1 cup brown lentils (soaked)
4 cups water
2 large sweet potatoes
1/2 an onion
2 cloves of garlic
1 inch organic ginger root
1 inch organic turmeric root
2 cups baby spinach
1 1/2 cup coconut milk
2 teaspoons cumin powder
2 teaspoons coriander powder
1 teaspoon turmeric powder
1 teaspoon red chili flakes
2 teaspoons sea salt
black pepper to taste
1 tablespoon coconut oil

Our Incredible Lentil Stew Recipe
Equipment
- 1 Pot
- 1 Large Bowl
- 1 Chopping board
- 1 Knife
- 1 Small bowl for seasonings
- 1 Wooden or silicone spatula
Ingredients
- 2 tbsp coconut oil
- ½ an onion finely chopped
- 2 cloves garlic finely chopped
- 1 inch organic ginger root finely chopped
- 1 inch organic turmeric root finely chopped
- 1 cup brown lentils (soaked)
- 4 cups water
- 1½ cups coconut milk
- 2 large sweet potatoes cut into ½ inch cubes
- 2 cups baby spinach
- 2 tsp cumin powder
- 2 tsp coriander powder
- 1 tsp turmeric powder
- 1 tsp red chili flakes
- 2 tsp sea salt
- black pepper to taste
Instructions
- In 2 tablespoons of coconut oil, saute the onion, garlic, ginger root, and turmeric root until brown
- Drain and wash the soaked lentils and add to pot stirring for about 3 minutes
- Add water to pot and coconut and simmer for 3 minutes
- Add potatoes, spinach, and powdered herbs and simmer for 6 minutes
- Add red chili flakes, salt, and black pepper to taste.
- Simmer everything on low heat stirring periodically for about 6 minutes.
- Serve hot over rice or in a bowl with some bread on the side
